We are celebrating Dr. Seuss this week so I decided to incorporate our theme into our tea party food! It was so yummy and a big hit with C. We had:
- Fancy Green Eggs
- Truffula Trees
- The King's Stilts Veggie Sticks
- Cat's Hat Parfait
- Peppermint Tea w/Honey
I try to avoid using food dyes so I used avocado to make the deviled egg filling green. I just mashed up the yolks with half an avocado, salt, pepper, paprika and a tiny bit of lime juice. I was a little nervous that I wouldn't like them but they were yummy!
For the Truffula Trees I just peeled horizontal stripes into a cucumber and cut into long slices. I wish I would have had larger carrots so I could use my veggie cutters to make them look more like the tops of a truffula tree.
The King's Stilts Veggie Sticks are just carrot and cucumber sticks. These were a bit of a stretch since the stilts are actually red, red bell pepper would have been better.
C was so excited for our Seuss themed treat! I just layered thawed frozen strawberries with plain green yogurt mixed with a little honey.
