I've been wanting to try einkorn flour for quite awhile now.  Everyone is talking about how modern wheat is so different from what it once was and many question whether it should be a part of our diet.  Einkorn wheat is an ancient wheat that is much lower in gluten than modern wheat.  Tropical Tradition's einkorn flour is whole wheat, organic and grown in the U.S. and Canada.  

I was so excited to try their einkorn flour!  I used it in a few of our favorite recipes with great results!  The flour is whole wheat so if you aren't used to baking with whole wheat flour, just know that it produces a denser product that white flour.  Our family always uses whole wheat and we actually prefer it!  C really appreciated being my helper in the kitchen.
